
Today Matthew and I were fortunate to have a couple of hours together, just him and I. Spending one on one time with each of my kids, doesn’t happen often. We ran errands and talked about his favorite topics: legos, Star Wars, music. During our conversation we talked about what we would make for dinner. The market was our last stop, and Matthew suggested salmon. He knows it is a family favorite. He also shared with me that, “salmon is healthy for us too, Mom.” Indeed he was right as he later shared with me that salmon is a fish "that is very high in omega-3 fats per serving. Omega-3 fats are a unique type of health-promoting unsaturated fat. It is high in protein, which is necessary to build body cells, tissues and muscles. Salmon is a low-mercury fish, rich in many nutrients, such as vitamins and minerals.” I think he might be secretly watching Dr. Oz!
This salmon can stand alone or you can serve it on top of a light kale and tomato salad as pictured above. The key to this tasty salmon is the seasoning Matthew and I used, given to us by my friend Julie. We used Braswell's Select Savory Salmon Seasoning.

Take a piece of Atlantic farm raised salmon and drizzle with Organic Tuscan Herb Olive Oil from The Olive Scene, then rub into the salmon Braswell's Select Savory Salmon Seasoning. Broil on low for 15 minutes until salmon is easily flaked with a fork. While salmon is in the oven, clean and chop kale. Massage kale with a drizzle of Organic Tuscan Herb Olive Oil and 4 Leaf Balsamic Vinegar both from The Olive Scene. Chop up a handful of sunburst tomatoes and cherry tomatoes and mix with your kale. Add one shredded carrot and season with salt and pepper. Place salmon on top of salad.
